Jack and Jill cakes was started by my great grandmother ,Christine Knapek, in 1945 from her home in Corpus Christi, Texas. She was a master baker and an amazing woman! She specialized in wedding cakes and Czech pastries. My great grandfather owned a grocery store so it seems the two went hand in hand. My great grandmother was my care giver as a child and I aspired to be as wonderful a baker as her. To this day everyone says "It's in my blood to carry it on".
